Soho cocktail bar Bar Mind has turned Hong Kong's most nostalgic comfort food into a drinks list. What is Bar Mind?
Bar Mind (念) is a minimalist cocktail bar on Elgin Street, founded by Jo Lo and Birstacla Wong, a couple who both previously worked at Draft Land and Room 309 before striking out on their own. The name means “thought” or “intention” in Chinese, reflecting their belief that a cocktail made with genuine purpose resonates on a personal level and tells its own story. The space itself is deliberately raw and unbranded — bottles are unlabelled, service is simple, and the focus stays on flavour and conversation rather than spectacle.
Since opening in July 2025, Bar Mind has built its identity around numbered “chapters” — full menu resets that each explore a different idea. “Chapter III: The Proustian Effect” is the bar's third, and its most explicitly Hong Kong-facing yet, built around the way a specific taste or smell can pull up a whole memory — the Proustian effect the chapter takes its name from.
What's on the “Proustian Effect” menu?
Ten cocktails translate cha chaan teng staples and street-cart snacks into drinks, priced HK$100 to HK$150 plus service. The Claypot Sour (HK$100) is built on black glutinous rice wine and Chinese sausage oil, echoing the smoky, savoury edge of claypot rice. The Satay Highball (HK$120) pairs tequila and mezcal as a tribute to satay beef noodles, while Bub Bub Culture (HK$140) is a lychee-wood-smoked riff on Four Seas candy, a childhood staple for many Hong Kong drinkers.
Other creations on the menu nod to Horlicks, roasted sweet-potato trolleys, coconut chicken soup, and — in one of the more playful references — the chef's salad from Wong Kar-wai's Chungking Express. The new chapter sits alongside Bar Mind's permanent Signatures collection, so regulars can still order from the earlier menus if they'd rather. Elgin Street sits in the heart of Soho, a short stretch of the Central–Mid-Levels Escalator from Lan Kwai Fong. Since Bar Mind doesn't take reservations, arriving early on Friday and Saturday nights is the safest way to get a seat.
